Eric Hollon

Professional Background:
Chef Hollon has honed his skills in traditional Italian cuisine during his tenure at Bravo! Italian Cucina. He successfully led culinary teams as Executive Chef at Skyline Club and Old National Center, overseeing kitchen operations, menu development, and staff training. Chef Hollon believes in fostering collaborative relationships with colleagues, vendors, and customers to create a culture of excellence and accountability. 

Inspiration for Cooking: His inspiration for cooking stems from a deeply rooted connection to family and tradition, initially learning alongside his family, which evolved into a professional passion for exploring and creating new flavors. Chef Hollon is constantly driving him to create new culinary combinations and explore new cooking techniques in the pursuit of an extraordinary tasting experience. 

Goals for New Spring Menu Launching in April:  To design a spring menu that celebrates the season’s bounty with vibrant, seasonal produce, lighter fare infused with bright flavors and herbs, incorporating global inspirations while balancing textures and colors. Our goal is to offer seasonal specials for holidays, maintain flexibility for dietary preferences, and engage with local suppliers to ensure freshness and sustainability.

Favorite Thing to Cook: Chef loves preparing and grilling meats. He’s most looking forward to the scallops or duck on the spring menu.

Hobby: Gardening and growing his own food.
